After I removed extended the stack and removed the baffle from my Old Country BBQ Pits Pecos, many of you asked about the baffle and if it could be inverted or made into a ramp, if you will, to scoop or direct hot gas out of the firebox up over the cooking grate. Well, in this video, I give it a try. Plus, we could a brisket!

DIY Easy Firewood Rack | How to Season Firewood

EASY FIREWOOD RACK #firewood #firewoodrack Today I make a wood rack for a load of firewood that needs to be seasoned. Wood needs to be" seasoned", which basically means sitting out in the elements for a season, several actually. Most hardwoods require 6 months to a year or more to really be seasoned. What this process really does is bring the woods moisture content down to 20% or less, which is...

I'm back w/ my third brisket cook on the Old Country BBQ Pits Pecos w/ the stack extension and removed baffle. This time, I'm trying out a 2:1 ratio of black pepper to kosher salt, which is used by several bbq places in central Texas, like Leroy & Lewis and as seen on Chud's BBQ. Though I'm not using 16 mesh black pepper, I'm doing it with freshly ground black pepper. Come a long and see how it...

Seasoned wood also has to be kept out of the elements. If it gets rained on or snowed on, it’s no longer seasoned.

Use the tubeless tires, who wants to deal with with flat tires. Also, he was already there when he removed the cotter pins! Just use the same axle slap on the new wheels, replace pins done deal. Better tie it to something heavy, in Florida they like to walk off the patio and hold on to the fence when it storms.

I find these don't hold up too well to frost heaving. Not a concern for you but others further north. After a couple years, the wood pile isn't even close to straight- almost tipped over.

So I have an older model offset smoker that I was planning on installing a baffle on the bottom to help even out cooking temps from Firefox side to smkokestack side... here's my question, would extending the length of the smokestack eliminate the need for a full length baffle ?

So, I’ve owned a Pecos and a Brazos. One thing I noticed was the Lava Lock tuning plate worked insanely well on the Pecos and absolutely flopped on the Brazos. Odd, right? I’m now on my second Pecos due to needing one (sold my Brazos to buy a MB 1050. I know, it was a bad idea.) makes me wish I had added 16” of stack to my Brazos. My current Pecos has an Amazon felt gasket, LavaLock tuning plate, I’m super curious to see how performance will change once I extend the length of the stack. Current temps are quite even cooking but I still want more draw.

I'm actually making a double-stack version right now. I found (made a bunch for a disabled vet friend like a decade ago) that double-stacking and using two triangles with 2x6's at the back makes for a much more stable platform. I also added two cross braces on essentially the same bottom stringer box, 1/3rd of the way across to take out the flex of the bottom box. Built him six of them in a day and he has them till the now. We picked up some 4ft x 12ft tarps at HF and they got bungied down over the side cross braces in the identical location to those you added. If you find a permanent home for it, try a double-stacked version. You wont be disappointed. Not too much harder to load, air flow is still good enough, and those that I built have survived hits from a tractor. (student driver, his granddaughter.)

I have a cheap offset smoker myself, and it's hard to get a good temperature unless I use an enormous amount of coal/wood. At LEAST 3 times - probably even much more, than I'd need for my barbecue grill. And it's no wonder, since the surface area of the whole offset smoker is easily 3x the surface area of the bbq grill. My idea is to insulate the offset smoker - the whole thing - to retain the heat. You can actually buy insulating blankets for offset smokers, but they're pretty expensive for what they are. I'm thinkin about using mineral wool (heat resistant to over 1000°C) to insulate the outside of the offset smoker. I'm just not quite sure how to attach it.. and how to make it not completely ugly. 😅😅

    • @clemensruis

I'm absolutely convinced that insulating it well will completely transform the whole thing into something completely awesome.

Grazie ancora e ciao dall'Italia

Forgive me for not understanding, but isn't cutting out the baffle to make up for adding a stack extension, the same as if you were to just leave the stack and baffle alone? Seems like the stack extension created a need for more airflow so I understand why you cut out the baffle, but if you didn't add the stack extension, would the smoker already be tuned for that out of the factory? Either way, I appreciate the time you took to make this video, I'm still learning ✌️

I cut my baffle like yours & mounted it up against the bottom right rack support, perpendicular to the grate. It cooks perfectly even from one end to the other. So big win... especially when coupled with a stack extension fitted with a butterfly damper. Cooks like much bigger & pricier smokers

Would fitting a stack extension that has a wider diameter than the stack it's fitting into make any difference, or is it just about the length of the exhaust stack?

One thing you have to remember is a lid gasket (to seal the smoke). If you install this with a gasket already installed, plan on replacing the gasket if the old one gets funky. Or it will be out of alignment. If you don’t have a gasket and plan on installing one, do that before mounting the hinge.

Another factor to consider is that the air draw depends on the temperature. You cant have it balanced for both 200 and 400. I use extended stack, drilled-through baffle and a water pan (even empty) and I move the pan depending on my temperature. I end up with short hotspot close to chamber entry (where I dont cook) at high temps and nicely even distribution at lower temps.
